Edikaikong is a highly nutritious, rich Nigerian vegetable soup native to the Efik-Ibibio people of Cross River and Akwa Ibom states. It is made primarily with a large volume of fluted pumpkin leaves (ugu) and water leaves, cooked in palm oil with assorted meats, smoked fish, and seafood, with minimal added water to ensure a thick, nutritious consistency.
